Moulin de Ciffre

Moulin de Ciffre is owned by the Lesineau family, who previously owned Chateau Haut-Gardere in Pessac-Leognan (sold to Chateau de Fieuzal). They bought the Moulin de Ciffre after a two year search, closing the deal in 1998. Located in the upper valley of the Taurou river, the estate has vines in three appellations: Faugeres, Saint-Chinian, and Coteaux du Languedoc. It produces a wine from each appellation, as well as a Vin de Pays des Coteaux de Murviel and a Vins de Pays d'Oc.

Soil and Climate: The vineyard covers over thirty hectares at the foot of the Monts du Caroux, on dry sun-baked stony slopes. The soils are composed of schist and limestone clay. Traditional grapes (Grenache, Syrah, Mourvedre, Cinsault, Carignan) are grown along with Cabernet Sauvignon and Viognier. The vineyard is cultivated with low yields and optimal maturity in mind. Pesticides are kept to a minimum, and organic practices followed as much as possible. (As certified by Terra Vitis, an organisation that promotes and certifies the Lutte Raisonnee, a form of ecologically friendly agriculture that stops short of organic agriculture per se.)

The Wines: The goal of the domaine is to produce wines that are true to the terroir, aromatic, with good structure but supple and generous.

The following applies to all the wines:

Yield: 40 hl/ha

Vineyard: The soil is ploughed, fertilized with compost, `lutte raisonnee' anti-pest program. Leaf-thinning and `green' harvest. Harvested by lot, for optimal maturity.

Vinification: Complete de-stalking of the grapes. Each grape vinified separately, with vineyard lot selection. Long temperature-controlled soak.


Moulin de Ciffre Saint Chinian Rouge

Grapes: Syrah, Grenache, Mourvedre

Soils A transitional hillside zone where schists and clayey-limestone mix.

Elevage: In tank, for a year.

Tasting notes: Dried plums, spices and even smoke on the nose. A harmonious palate, with round, well-integrated tannins. Drink in 2 to 5 years, with meat dishes.

Grapes: Syrah, Grenache, Carignan, Mourvedre (Some of the Carignan is vinified using carbonic maceration).

Soils Hillside schists.

Elevage: In tank, for a year.

Grapes: Syrah, Grenache, Carignan, Mourvedre (Some of the Carignan is vinified using carbonic maceration).

Soils Hillside schists.

Elevage: Two thirds in barriques, one third in tank. For a year.

Tasting notes: Deep ruby, spicy nose, black fruits. Round tannins, supple and elegant with well integrated wood, and a long finish.


Moulin de Ciffre Faugères Rouge Cuvée Eole

Grapes: Syrah, Grenache, Mourvedre

Soils Hillside schists.

Elevage: Two thirds in new barriques, one third in one year old barriques. For a year.

Tasting notes: Black fruits on the nose, with spice and black pepper. A gentle attack, smooth, silky and concentrated, with significant but well-rounded tannins. Fine and elegant. Can keep for five to ten years. Serve with lamb and young game.

Vin de Pays des Coteaux de Murviel Rouge

Grapes: Cabernet Sauvignon, Syrah

Soils Ancient terraces of the upper Taurou valley, and limestone with madrepore.

Elevage: In barriques.

Tasting notes: Ripe fruit and licorice notes. Concentrated, with significant but round tannins, full bodied. Can keep for 3-4 years. Serve with beef, duck, young partridge.
