Domaine Maurice Ecard Savigny lès Beaune
Considered by Bettane & Desseauve' "Best Wines of France" as a "shining light in Savigny", Maurice Ecard has helped lead the way in quality for this commune. His wines show deep colour, fine fruit and the capacity to age. He produces some of the best premier cru in Savigny. His three sons have joined him in his efforts. The domaine is particularly unusual in making all its own grafts. M. Ecard aims, and succeeds, at producing small, concentrated berries. He gets as much colour as possible with relatively high fermentation temperatures, and mixes some whole bunches and stems in with the crush. His sons have taken over his practice of pigeage, the foot-treading he believes is vital to proper extraction. The family consider their first goal to be the expression of terroir.
Wines from the Pernand-Vergelesses side of the village, such as Serpentières, are considered more elegant, while those closer to Beaune are usually broader and more muscular. All the wines show distinctive vineyard personalities.
