Meursault, France
His father was Hubert Chavy, winery founder and inheritor of his father's vines in Puligny-Montrachet. His mother's side is the Ropiteau family, the oldest winemaking family in Meursault. Suffice to say, the pedigree of Romaric Chavy's vines and the man himself cannot be overstated. The 8th generation proprietor at Domaine Chavy-Chouet could certainly rest on those laurels alone, but his vineyard and practices are anything but complacent. A veritable prodigy, Romaric's quest for perfection in the winery is imparted both in his bloodline and his upbringing itself.
Romaric enrolled in oenology school at the ripe old age of twelve. He staged with his godfather, François Mikulski of his eponymous domain, for six years before coming aboard under his own father. Sadly, the charismatic Hubert Chavy passed on in 2014, leaving Romaric to oversee the Domaine at just 22 years old. More than up to the task, he has led with unmatched vigorous enthusiasm and seriousness of purpose.
The winery itself sits at the very heart of Meursault. Vineyard holdings amount to 15 hectares spanning 14 appellations including Meursault, Puligny-Montrachet, Saint-Aubin, Volnay, Pommard, and Maranges. Eighty percent of overall production is white, the remainder red. Forty percent of the vines are in Puligny-Montrachet including coveted plots in Les Enseignères, Les Folatières, and Champ Gains. Vines are farmed according to organic principles. No herbicides have been used at these sites for over thirty years. All farming is certified sustainable. The average age of the vines throughout the Domaine is forty years.
Winemaking is traditional with natural yeast fermentation, but the winery itself is state-of-the-art. Gravity barreling, minimal intervention, and obsessive, impeccable cleanliness are all hallmarks of Romaric's approach in the winery. Balanced ABV is always top of mind. For barrels, works exclusively with famed cooperage Claude Gillet in St. Romain, supplying top Burgundy producers with world class barrels from Allier, Limousin, and Nevers forests since 1966. Chavy opts for medium toast on these and uses a maximum of 20% new wood. There is no bâtonnage. Like his father before him, he does not fine or filter.
