Colleluce is the passionate project of Franca Malavolta. She makes a range of very good wines, but her most distinctive is the Vernaccia della Serrapetrona. The production is very small, 2500 cases in a good year, as they prune short and only use the very best fruit for it. Half of the grapes are pressed immediately and fermented in autoclave. The other half are dried on racks for around three months and in turn pressed, separately in autoclave. The two fermented wines are then married, still under pressure in the autoclave, for a third and final fermentation. This method retains all the natural fruit, and of course provides a little bubble as well. Franca makes a Secco and a Dolce, both of which are absolutely memorable. The Brecce Rosse is a lovely dry red, made from dried Vernaccia Nera and Merlot.
