PASCAL COTAT

Sancerre, France

Pascal Cotat makes some of the most distinctive wines in the appellation. Along with his cousin François (see François’ profile for the family history) he farms and vinifies very traditionally, and on a very small scale (only 2.5 hectares). Their wines are similar, though if anything he is a little less fond of residual sugar than François. His wines also tend to open up relatively quickly compared to François’. However the difference is relative, and his wines remain among the longest-lived, and best, of the appellation.
