Savignola
has belonged to my family since 1780. The wine productionstarted around
the middle of the 1800s with my grandfather Carlo. Then, almost a century
later, it was really my aunt, Paolina Fabbri, with her great love for and
competence in the art of winemaking, who brought fame to our vineyard, in
this small corner of Chianti Classico.
In an effort to carry on the family tradition of fine
winemaking, I resorted the vinification area, and the ancient cellar
which dates back to the 1600s. I have maintained unchanged the
centuries-old process of production:
the pruning and training of the vines is in the old Tuscan style
the grapes are carefully selected and harvested by hand, as late as
possible towards the end of October
the ageing of our Chiant Classico takes place in the ancient cellars in
medium-sized oak casks for at least 18 months
the bottling occurs in accordance with lunar phases, and the wine is left
to rest in bottle for several more months before its release
There is no better way to understand and appreciate that
subtle blend of knowledge, experience and intuition than to be a guest at
a tasting in my cellars at Savignola!
